Instructions
- Preheat oven to 190°C (375°F).
- Cut tops off bell peppers and remove seeds. Place in a baking dish.
- In a skillet, heat olive oil over medium heat. Add onion and cook until soft, about 3-4 minutes.
- Add ground turkey and cook until browned. Drain excess fat if necessary.
- Stir in cooked rice, tomatoes, oregano, salt, pepper, and half the feta cheese.
- Spoon mixture into bell peppers. Sprinkle remaining feta on top.
- Add a small amount of water to the bottom of the baking dish.
- Cover with foil and bake for 30 minutes. Uncover and bake 10 minutes more.
- Garnish with fresh parsley before serving.
