Ingredients

Instructions

  1. Preheat oven to 190°C (375°F).
  2. Cut tops off bell peppers and remove seeds. Place in a baking dish.
  3. In a skillet, heat olive oil over medium heat. Add onion and cook until soft, about 3-4 minutes.
  4. Add ground turkey and cook until browned. Drain excess fat if necessary.
  5. Stir in cooked rice, tomatoes, oregano, salt, pepper, and half the feta cheese.
  6. Spoon mixture into bell peppers. Sprinkle remaining feta on top.
  7. Add a small amount of water to the bottom of the baking dish.
  8. Cover with foil and bake for 30 minutes. Uncover and bake 10 minutes more.
  9. Garnish with fresh parsley before serving.
