A modern twist on the classic Lebanese salad, using protein-rich quinoa instead of bulgur wheat, with plenty of fresh herbs and vegetables.

Ingredients

Instructions

  1. Cook quinoa according to package directions, then cool completely.
  2. In a large bowl, combine cooled quinoa, chopped tomatoes, cucumber, red onion, and plenty of fresh parsley and mint.
  3. In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
  4. Pour dressing over the salad and toss gently to combine.
  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
