Instructions
- Cook quinoa according to package directions, then cool completely.
- In a large bowl, combine cooled quinoa, chopped tomatoes, cucumber, red onion, and plenty of fresh parsley and mint.
- In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
- Pour dressing over the salad and toss gently to combine.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.
