Instructions
- Heat olive oil in a pot over medium heat. Sauté onion, carrot, and celery for 5 minutes.
- Add garlic, cumin, and smoked paprika; cook 1 minute more.
- Add lentils, vegetable stock, diced tomatoes, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer, covered, for 25-30 minutes until lentils are tender.
- Remove bay leaf. Stir in lemon juice and fresh herbs.
- Serve hot, with a drizzle of olive oil on top if desired.
