Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and sauté until translucent, about 5 minutes.
- Add garlic, ginger, cumin, coriander, cinnamon, and turmeric. Cook for 1 minute until fragrant.
- Add butternut squash, carrots, and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 20-25 minutes until vegetables are very tender.
- Remove from heat and blend with an immersion blender until smooth.
- Stir in coconut milk (if using), lemon juice, salt, and pepper.
- Warm through and serve garnished with pumpkin seeds and fresh cilantro if desired.
