Ingredients

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and sauté until translucent, about 5 minutes.
  3. Add garlic, ginger, cumin, coriander, cinnamon, and turmeric. Cook for 1 minute until fragrant.
  4. Add butternut squash, carrots, and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 20-25 minutes until vegetables are very tender.
  6. Remove from heat and blend with an immersion blender until smooth.
  7. Stir in coconut milk (if using), lemon juice, salt, and pepper.
  8. Warm through and serve garnished with pumpkin seeds and fresh cilantro if desired.
