Instructions
- Preheat oven to 190°C (375°F).
- Cut bell peppers in half lengthwise and remove seeds and membranes. Place cut-side up in a baking dish.
- In a bowl, combine cooked quinoa, black beans, corn, diced tomatoes, garlic powder, cumin, oregano, salt, and pepper.
- Stuff each pepper half with the quinoa mixture. Cover dish with foil.
- Bake for 30 minutes. Remove foil, sprinkle peppers with cheese if using, and bake uncovered for 5 more minutes.
- Garnish with fresh cilantro or parsley before serving.
