Description

Spiced ground lamb formed into skewers or patties, grilled and served with a fluffy bulgur wheat pilaf. A Middle Eastern classic.

Instructions

  1. In a large bowl, combine ground lamb, minced onion, garlic, parsley, mint, cumin, cinnamon, salt, and pepper. Mix thoroughly.
  2. Form mixture into oblong patties around skewers, or into meatball-sized portions if not using skewers.
  3. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  4. Meanwhile, prepare bulgur: bring water or stock to a boil, add bulgur, return to a boil, then reduce heat, cover, and simmer for 10-12 minutes until tender.
  5. Remove from heat, let stand covered for 5 minutes, then fluff with a fork. Stir in olive oil, lemon zest, and parsley.
  6. Grill or pan-fry kofta for 3-4 minutes per side until cooked through.
  7. Serve kofta alongside bulgur pilaf with lemon wedges and yogurt sauce if desired.
