Greek-style chicken skewers marinated in lemon, garlic, and herbs, grilled and served with a cooling cucumber-yogurt tzatziki sauce.

Instructions

  1. In a ziplock bag or bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  2. Add chicken pieces and toss to coat. Marinate for at least 30 minutes, up to 4 hours in the refrigerator.
  3. If using wooden skewers, soak in water for 30 minutes before grilling.
  4. Thread marinated chicken onto skewers.
  5. Grill over medium-high heat for 10-12 minutes, turning occasionally, until chicken is cooked through.
  6. Meanwhile, make tzatziki: combine grated cucumber (squeezed to remove excess moisture), yogurt, garlic, lemon juice, dill, salt, and pepper.
  7. Serve chicken skewers with tzatziki sauce for dipping and lemon wedges on the side.
