- In a ziplock bag or bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
- Add chicken pieces and toss to coat. Marinate for at least 30 minutes, up to 4 hours in the refrigerator.
- If using wooden skewers, soak in water for 30 minutes before grilling.
- Thread marinated chicken onto skewers.
- Grill over medium-high heat for 10-12 minutes, turning occasionally, until chicken is cooked through.
- Meanwhile, make tzatziki: combine grated cucumber (squeezed to remove excess moisture), yogurt, garlic, lemon juice, dill, salt, and pepper.
- Serve chicken skewers with tzatziki sauce for dipping and lemon wedges on the side.
