Ingredients

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Cut the avocado in half lengthwise and remove the pit.
  3. Scoop out a little extra flesh from the pit cavity to make room for the egg (about 1-2 tbsp per half).
  4. Place avocado halves in a small baking dish to keep them stable.
  5. Carefully crack one egg into each avocado half.
  6. Season with salt, pepper, and chili flakes/paprika if using.
  7. Bake for 12-18 minutes, depending on how runny you like your yolks.
  8. Garnish with chopped chives, if desired.
