Instructions
- Preheat oven to 200°C (400°F).
- Place cod fillets in a baking dish lightly coated with olive oil.
- In a bowl, combine halved cherry tomatoes, sliced olives, capers, minced garlic, 1 tbsp olive oil, white wine, salt, and pepper.
- Spoon the tomato mixture over and around the fish.
- Drizzle with remaining olive oil and sprinkle with oregano.
- Bake for 15-20 minutes, until fish is opaque and flakes easily.
- Garnish with fresh parsley before serving.
