Ingredients

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Place cod fillets in a baking dish lightly coated with olive oil.
  3. In a bowl, combine halved cherry tomatoes, sliced olives, capers, minced garlic, 1 tbsp olive oil, white wine, salt, and pepper.
  4. Spoon the tomato mixture over and around the fish.
  5. Drizzle with remaining olive oil and sprinkle with oregano.
  6. Bake for 15-20 minutes, until fish is opaque and flakes easily.
  7. Garnish with fresh parsley before serving.
