1.5 lbs Cod fillets
2.0 cups Cherry tomatoes
0.5 cup Kalamata olives
2.0 tbsp Capers
3.0 cloves Garlic
1.0 tsp Dried oregano
0.25 tsp Red pepper flakes
3.0 tbsp Olive oil
0.25 cup White wine
1.0 tsp Salt
0.5 tsp Black pepper
0.25 cup Fresh parsley
1.0 whole Lemon
Instructions
- Preheat oven to 400°F (200°C).
- Pat cod fillets dry and season with salt and pepper.
- In a bowl, combine tomatoes, olives, capers, garlic, oregano, and red pepper flakes.
- Place cod in a baking dish and top with tomato mixture.
- Drizzle with olive oil and white wine.
- Bake for 15-20 minutes until fish flakes easily with a fork.
- Garnish with fresh parsley and lemon wedges before serving.
