Ingredients

2.0 tbsp Olive oil
1.0 large Onion
2.0 medium Carrots
2.0 stalks Celery
3.0 cloves Garlic
1.0 tsp Ground cumin
0.5 tsp Ground coriander
1.5 cups Red lentils
1.0 can (14 oz) Diced tomatoes
6.0 cups Vegetable broth
1.0 tsp Salt
0.5 tsp Black pepper
2.0 tbsp Lemon juice
0.25 cup Fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; sauté until softened, about 5 minutes.
  3. Add garlic, cumin, and coriander; cook for 1 minute until fragrant.
  4. Add lentils, diced tomatoes, broth, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils are tender.
  6. Stir in lemon juice and fresh herbs.
  7. Serve hot with a drizzle of olive oil.
