Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions, carrots, and celery. Sauté for 5 minutes until softened.
- Add garlic and dried oregano, cook for 1 minute until fragrant.
- Add chicken broth, chicken breasts (whole), and bay leaf. Bring to a boil.
- Reduce heat and simmer for 20 minutes, until chicken is cooked through.
- Remove chicken, shred with forks, and return to pot.
- Add orzo and cook for 8-10 minutes until tender.
- Stir in lemon juice and zest, fresh dill, and baby spinach.
- Cook for 1-2 minutes until spinach wilts.
- Season with salt and pepper to taste.
