Ingredients

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery. Sauté for 5 minutes until softened.
  3. Add garlic and dried oregano, cook for 1 minute until fragrant.
  4. Add chicken broth, chicken breasts (whole), and bay leaf. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes, until chicken is cooked through.
  6. Remove chicken, shred with forks, and return to pot.
  7. Add orzo and cook for 8-10 minutes until tender.
  8. Stir in lemon juice and zest, fresh dill, and baby spinach.
  9. Cook for 1-2 minutes until spinach wilts.
  10. Season with salt and pepper to taste.
