Instructions
- In a pot, bring chicken broth to a simmer.
- Add diced chicken and rice/orzo. Cook until rice/orzo is tender (follow package time).
- In a bowl, whisk together eggs and lemon juice until frothy.
- Slowly add 1 cup of hot broth to egg mixture, whisking constantly.
- Pour the egg-broth mixture back into the pot, whisking constantly.
- Heat on low until slightly thickened (do not boil).
- Season with salt and pepper.
- Serve hot, garnished with fresh dill if desired.
