Ingredients

2.0 cans (15 oz each) Fava beans
3.0 cloves Garlic
1.0 tsp Ground cumin
3.0 tbsp Olive oil
2.0 tbsp Lemon juice
1.0 medium Tomato
0.5 small Red onion
0.25 cup Fresh parsley
1.0 tsp Salt
0.5 tsp Black pepper
4.0 pieces Pita bread

Instructions

  1. Drain and rinse fava beans.
  2. In a pot, add beans, garlic, and enough water to cover. Bring to a simmer.
  3. Cook for 15 minutes until tender, then partially mash with a fork.
  4. Season with cumin, salt, and pepper.
  5. Transfer to a serving bowl. Drizzle with olive oil and lemon juice.
  6. Garnish with chopped tomatoes, parsley, and red onion.
  7. Serve with warm pita bread.
