Ingredients

3.0 lbs Chicken drumsticks
3.0 large Onions
6.0 cloves Garlic
2.0 tbsp Ginger
3.0 tbsp Berbere spice
3.0 tbsp Tomato paste
1.0 cup Chicken stock
6.0 large Eggs
3.0 tbsp Butter
1.0 package Injera bread

Instructions

  1. In a large pot, cook onions over low heat for 20 minutes until caramelized.
  2. Add garlic, ginger, and berbere spice. Cook for 3 minutes until fragrant.
  3. Add chicken pieces and brown on all sides.
  4. Pour in water or stock, and add tomato paste. Simmer covered for 45 minutes.
  5. Hard-boil the eggs separately.
  6. Add eggs to the stew during the last 10 minutes of cooking.
  7. Stir in butter before serving.
  8. Serve with injera bread for scooping up the stew.
