Ingredients

2.0 cups Short-grain rice
1.0 lb Chicken thighs
6.0 oz Chorizo
0.5 lb Shrimp
0.5 lb Mussels
0.5 tsp Saffron threads
1.0 tbsp Paprika
1.0 medium Onion
2.0 medium Bell peppers
4.0 cloves Garlic
1.0 cup Diced tomatoes
4.0 cups Chicken broth
1.0 cup Frozen peas
0.25 cup Olive oil
2.0 lemons Lemon wedges

Instructions

  1. Heat olive oil in a paella pan or large skillet.
  2. Sauté chicken and chorizo until browned, then remove.
  3. Add onion, bell peppers, and garlic to the pan and cook until soft.
  4. Stir in rice, paprika, saffron, and tomatoes, cooking for 2 minutes.
  5. Pour in chicken broth and bring to a boil.
  6. Return chicken and chorizo to pan, reduce heat, and simmer uncovered for 15 minutes.
  7. Arrange seafood on top, cover, and cook until rice is tender and seafood is cooked.
  8. Add peas in the last 5 minutes of cooking.
  9. Remove from heat, cover with a kitchen towel, and let rest before serving.
