Instructions
- Preheat oven to 190°C (375°F). Line a baking sheet with parchment paper.
- In a bowl, mix chopped spinach, crumbled feta, egg, dill, parsley, green onions, salt, and pepper.
- Lay out one sheet of phyllo dough and brush lightly with olive oil. Place another sheet on top and brush with oil again.
- Cut the stacked sheets lengthwise into 4 strips.
- Place a spoonful of filling at one end of each strip.
- Fold the corner of the strip over the filling to form a triangle, then continue folding in a triangle pattern to the end of the strip.
- Place triangles on the prepared baking sheet and brush tops with olive oil.
- Bake for 20-25 minutes until golden brown and crispy.
- Allow to cool slightly before serving.
