Description

Fresh herb and bulgur wheat salad with tomatoes, cucumber and a zesty lemon dressing.

Ingredients

0.5 cup Bulgur wheat
1.0 cup Boiling water
2.0 cups Fresh parsley
0.5 cup Fresh mint
4.0 stalks Green onions
2.0 medium Tomatoes
1.0 medium Cucumber
0.25 cup Olive oil
0.25 cup Lemon juice
1.0 tsp Salt
0.25 tsp Black pepper

Instructions

  1. Place bulgur in a bowl and pour boiling water over it. Cover and let stand for 30 minutes until tender.
  2. Drain well and press out any excess water.
  3. In a large bowl, combine soaked bulgur, parsley, mint, green onions, tomatoes, and cucumber.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Pour dressing over salad and toss gently to combine.
  6. Chill for at least 1 hour before serving to allow flavors to blend.
