Ingredients

8.0 oz Halloumi cheese
6.0 cups Mixed lettuce
1.0 medium Cucumber
1.0 cup Cherry tomatoes
0.5 cup Kalamata olives
0.5 small Red onion
0.25 cup Olive oil
2.0 tbsp Lemon juice
1.0 tsp Dried oregano
0.5 tsp Salt
0.25 tsp Black pepper
0.25 cup Fresh mint

Instructions

  1. Slice halloumi cheese into 1/2-inch thick slices.
  2. Heat a grill pan over medium-high heat. Brush halloumi with olive oil.
  3. Grill halloumi for 2-3 minutes per side until grill marks appear and cheese is soft.
  4. In a large bowl, combine lettuce, cucumber, cherry tomatoes, olives, and red onion.
  5. Whisk together olive oil, lemon juice, oregano, salt, and pepper.
  6. Arrange grilled halloumi over salad and drizzle with dressing.
  7. Garnish with fresh mint leaves before serving.
