Ingredients

2.0 lbs Lamb shoulder
2.0 large Onion
4.0 cloves Garlic
2.0 tsp Ground cumin
1.0 tsp Ground coriander
1.0 tsp Ground cinnamon
1.0 tbsp Paprika
1.0 can (14 oz) Diced tomatoes
2.0 cups Chicken stock
1.0 can (15 oz) Chickpeas
0.5 cup Dried apricots
2.0 tbsp Honey
0.25 cup Fresh cilantro
0.25 cup Toasted almonds
3.0 tbsp Olive oil
2.0 cups Couscous

Instructions

  1. In a large Dutch oven or tagine pot, heat olive oil over medium heat.
  2. Add onions and cook until translucent.
  3. Add lamb, garlic, and spices, cooking until meat is browned.
  4. Pour in tomatoes and stock, bring to a simmer.
  5. Cover and cook on low for 1.5 hours until meat is tender.
  6. Add chickpeas, dried apricots, and honey. Simmer for 30 more minutes.
  7. Garnish with cilantro and almonds before serving.
  8. Serve with couscous.
