Ingredients

1.0 lb Black beans
0.5 lb Bacon
0.5 lb Smoked sausage
1.0 lb Pork ribs
2.0 large Onions
4.0 cloves Garlic
3.0 leaves Bay leaves
2.0 medium Orange
2.0 cups Rice
1.0 bunch Collard greens
2.0 tsp Salt
1.0 tsp Black pepper

Instructions

  1. Soak black beans overnight, then drain.
  2. In a large pot, cook bacon and sausage until fat is rendered.
  3. Add onions and garlic, sauté until soft.
  4. Add soaked beans, pork cuts, bay leaves, and water. Bring to a boil.
  5. Reduce heat and simmer for 2-3 hours until beans and meat are tender.
  6. Season with salt and pepper.
  7. Serve over rice with sliced oranges, collard greens, and farofa.
