3.0 lbs Chicken pieces
6.0 oz Bacon
2.0 cups Red wine
1.0 cup Chicken stock
1.0 large Onion
2.0 medium Carrots
4.0 cloves Garlic
8.0 oz Mushrooms
2.0 tbsp Butter
1.0 tbsp Tomato paste
4.0 sprigs Fresh thyme
1.0 leaf Bay leaf
Instructions
- In a large Dutch oven, cook bacon until crisp. Remove and set aside.
- Brown chicken pieces in bacon fat. Remove and set aside.
- Sauté onions, carrots, and garlic in the same pot.
- Add chicken back to pot with bacon, red wine, chicken stock, tomato paste, thyme, and bay leaf.
- Simmer covered for 30 minutes.
- In a separate pan, sauté mushrooms in butter.
- Add mushrooms to chicken, simmer for 15 more minutes.
- Serve with crusty bread or potatoes.
