Ingredients

1.0 tbsp Active dry yeast
1.0 tsp Sugar
1.25 cups Warm water
3.0 cups All-purpose flour
1.0 tsp Salt
2.0 tbsp Olive oil

Instructions

  1. In a large bowl, combine yeast, sugar, and warm water. Let stand for 5 minutes until foamy.
  2. Add 2 cups flour, salt, and olive oil. Mix until a shaggy dough forms.
  3. Gradually add remaining flour while kneading until smooth and elastic, about 8 minutes.
  4. Place dough in an oiled bowl, cover, and let rise until doubled, about 1 hour.
  5. Punch down dough and divide into 8 equal pieces. Form into balls.
  6. Roll each ball into a 6-inch circle on a floured surface.
  7. Let rest for 30 minutes.
  8. Preheat oven to 500°F (260°C) with a baking stone inside.
  9. Bake pitas 2-3 at a time for 3-4 minutes until puffed and lightly browned.
