Ingredients

6.0 large Bell peppers
2.0 tbsp Olive oil
1.0 large Onion
1.0 lb Ground lamb
3.0 cloves Garlic
1.0 can (14 oz) Diced tomatoes
2.0 cups Cooked rice
2.0 tsp Dried oregano
2.0 tbsp Fresh mint
1.0 tsp Salt
0.5 tsp Black pepper
1.0 cup Feta cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut tops off peppers and remove seeds. Place in a baking dish.
  3. Heat olive oil in a skillet over medium heat. Add onion and cook until soft.
  4. Add ground lamb and cook until browned. Drain excess fat.
  5. Add garlic, tomatoes, rice, oregano, mint, salt, and pepper. Cook for 2 minutes.
  6. Stir in half the feta cheese.
  7. Fill peppers with mixture and top with remaining feta.
  8. Pour 1/2 cup water into the bottom of the dish. Cover with foil.
  9. Bake for 30 minutes, then uncover and bake 15 more minutes until peppers are tender.
