3.0 tbsp Olive oil
1.0 large Onion
1.0 large Red bell pepper
3.0 cloves Garlic
2.0 tsp Paprika
1.0 tsp Ground cumin
0.25 tsp Cayenne pepper
2.0 cans (14 oz each) Diced tomatoes
1.0 tsp Salt
0.5 tsp Black pepper
6.0 large Eggs
0.5 cup Feta cheese
0.25 cup Fresh parsley
0.25 cup Fresh cilantro
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and bell peppers; cook until softened, about 5 minutes.
- Add garlic, paprika, cumin, and cayenne; cook for 1 minute until fragrant.
- Add diced tomatoes, salt, and pepper. Simmer for 10-15 minutes until slightly thickened.
- Make 6 small wells in the sauce and crack an egg into each.
- Cover and cook for 5-8 minutes until egg whites are set but yolks are still runny.
- Sprinkle with crumbled feta and fresh herbs before serving.
