0.5 cup Olive oil
1.0 large Onion
3.0 cloves Garlic
2.0 lbs Fresh spinach
12.0 oz Feta cheese
3.0 large Eggs
0.25 cup Fresh dill
0.25 tsp Ground nutmeg
1.0 tsp Salt
0.5 tsp Black pepper
16.0 sheets Phyllo dough
Instructions
- Preheat oven to 350°F (175°C).
- Sauté onions and garlic in olive oil until soft.
- Add spinach and cook until wilted. Let cool slightly, then squeeze out excess moisture.
- In a bowl, mix spinach mixture with feta, eggs, dill, and nutmeg. Season with salt and pepper.
- Brush a baking dish with olive oil. Layer 8 sheets of phyllo, brushing each with oil.
- Spread spinach mixture evenly over phyllo.
- Layer remaining 8 sheets on top, brushing each with oil.
- Score the top into serving pieces and bake for 45 minutes until golden and crisp.
