Ingredients

2.0 medium Zucchini
2.0 large Bell peppers
1.0 large Red onion
1.0 small Eggplant
3.0 tbsp Olive oil
1.0 tsp Garlic powder
1.0 tsp Dried oregano
1.0 tsp Dried basil
0.5 tsp Salt
0.25 tsp Black pepper

Instructions

  1. Preheat grill to medium-high heat.
  2. Slice vegetables and place in a large bowl.
  3. Drizzle with olive oil and season with garlic, herbs, salt, and pepper. Toss to coat.
  4. Grill vegetables for 3-5 minutes per side until tender and lightly charred.
  5. Arrange on a platter and drizzle with a little extra olive oil before serving.
