Ingredients
3.0 tbsp Green curry paste
2.0 cans (14 oz each) Coconut milk
1.0 lb Chicken breast or tofu
1.0 cup Bamboo shoots
2.0 medium Bell peppers
1.0 small Eggplant
5.0 leaves Kaffir lime leaves
2.0 tbsp Fish sauce
1.0 tbsp Palm sugar
2.0 tbsp Lime juice
0.5 cup Thai basil
2.0 tbsp Vegetable oil
Instructions
- In a large pan, heat oil over medium heat.
- Add green curry paste and stir until fragrant.
- Pour in coconut milk and bring to a simmer.
- Add chicken or tofu and cook for 5 minutes.
- Add vegetables and kaffir lime leaves. Simmer for 10 minutes.
- Season with fish sauce, palm sugar, and lime juice.
- Garnish with Thai basil leaves and serve with jasmine rice.
