- Use a spiralizer or vegetable peeler to create zucchini noodles. Place on paper towels to remove excess moisture.
- Heat 1 tbsp olive oil in a large skillet over medium-high heat.
- Add shrimp, season with salt and pepper, and cook 1-2 minutes per side until pink. Remove to a plate.
- In the same skillet, add remaining olive oil and minced garlic. Cook for 30 seconds until fragrant.
- Add white wine, lemon juice, and red pepper flakes. Simmer for 2 minutes to reduce slightly.
- Add zucchini noodles and toss for 1-2 minutes until just tender but still crisp.
- Return shrimp to the skillet and toss to combine. Cook for 1 minute more.
- Remove from heat, stir in fresh parsley.
- Serve immediately, topped with a sprinkle of parmesan if desired.
