Ingredients

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Toss eggplant, bell peppers, and onion with 2 tbsp olive oil, salt, and pepper.
  3. Spread on a baking sheet and roast for 25 minutes until tender and caramelized.
  4. Meanwhile, heat 1 tsp olive oil in a non-stick pan over medium-high heat.
  5. Cook halloumi slices for 1-2 minutes per side until golden brown.
  6. In a large bowl, combine mixed greens, roasted vegetables, and halloumi.
  7. Whisk together remaining olive oil, lemon juice, herbs, salt, and pepper.
  8. Drizzle dressing over salad and gently toss.
  9. Serve immediately while halloumi is still warm.
