- Toss eggplant, bell peppers, and onion with 2 tbsp olive oil, salt, and pepper.
- Spread on a baking sheet and roast for 25 minutes until tender and caramelized.
- Meanwhile, heat 1 tsp olive oil in a non-stick pan over medium-high heat.
- Cook halloumi slices for 1-2 minutes per side until golden brown.
- In a large bowl, combine mixed greens, roasted vegetables, and halloumi.
