  1. Preheat oven to 180°C (350°F).
  2. In a large bowl, combine all vegetables and minced garlic.
  3. Drizzle with olive oil and sprinkle with herbs, salt, and pepper. Toss to coat evenly.
  4. Transfer to a large baking dish. Pour crushed tomatoes and water over the vegetables.
  5. Cover with foil and bake for 45 minutes. Uncover and bake for 15-20 minutes more until vegetables are tender and slightly caramelized.
  6. Let rest for 10 minutes before serving.
  7. Serve with a sprinkle of fresh parsley and a side of crusty bread if desired.
