Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and sauté until translucent, about 4 minutes.
  3. Add carrots and cook for 3 more minutes.
  4. Add garlic, cumin, paprika, and tomato paste. Cook for 1 minute until fragrant.
  5. Add red lentils, vegetable broth, and salt. Bring to a boil.
  6. Reduce heat and simmer for 20-25 minutes until lentils are very soft.
  7. Use an immersion blender to puree the soup until smooth.
  8. Stir in lemon juice and adjust seasonings.
  9. Serve hot, garnished with fresh mint leaves and a drizzle of olive oil.
