Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions, carrots, and celery. Sauté for 5 minutes until softened.
- Add garlic, zucchini, and bell pepper, cook for 3 minutes.
- Add diced tomatoes, tomato paste, vegetable broth, beans, and herbs. Bring to a simmer.
- Add pasta and cook until al dente, about 8-10 minutes.
- Stir in fresh spinach until wilted.
- Season with salt and pepper.
- Serve hot with a drizzle of olive oil and freshly grated Parmesan cheese if desired.
