Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery. Sauté for 5 minutes until softened.
  3. Add garlic, zucchini, and bell pepper, cook for 3 minutes.
  4. Add diced tomatoes, tomato paste, vegetable broth, beans, and herbs. Bring to a simmer.
  5. Add pasta and cook until al dente, about 8-10 minutes.
  6. Stir in fresh spinach until wilted.
  7. Season with salt and pepper.
  8. Serve hot with a drizzle of olive oil and freshly grated Parmesan cheese if desired.
