Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and leeks, sauté until softened, about 5 minutes.
  3. Add garlic, sauté for 1 minute until fragrant.
  4. Add diced tomatoes, potatoes, bay leaf, and fish stock. Bring to a simmer.
  5. Cook for 15 minutes until potatoes are tender.
  6. Add fish pieces and cook gently for 5-7 minutes until fish is opaque and flakes easily.
  7. Stir in fresh parsley, lemon juice, salt, and pepper.
  8. Serve hot with lemon wedges on the side.
