Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and leeks, sauté until softened, about 5 minutes.
- Add garlic, sauté for 1 minute until fragrant.
- Add diced tomatoes, potatoes, bay leaf, and fish stock. Bring to a simmer.
- Cook for 15 minutes until potatoes are tender.
- Add fish pieces and cook gently for 5-7 minutes until fish is opaque and flakes easily.
- Stir in fresh parsley, lemon juice, salt, and pepper.
- Serve hot with lemon wedges on the side.
