Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions, carrots, and celery. Sauté for 5 minutes until softened.
- Add garlic and Italian herbs, cook for 1 minute until fragrant.
- Add vegetable broth, white beans, and bay leaf. Bring to a simmer.
- Cook for 15 minutes, then add chopped kale.
- Simmer for another 5 minutes until kale is tender.
- Remove bay leaf, stir in lemon juice, and season with salt and pepper.
- Serve hot with a drizzle of olive oil and optional grated Parmesan.
