Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery. Sauté for 5 minutes until softened.
  3. Add garlic and Italian herbs, cook for 1 minute until fragrant.
  4. Add vegetable broth, white beans, and bay leaf. Bring to a simmer.
  5. Cook for 15 minutes, then add chopped kale.
  6. Simmer for another 5 minutes until kale is tender.
  7. Remove bay leaf, stir in lemon juice, and season with salt and pepper.
  8. Serve hot with a drizzle of olive oil and optional grated Parmesan.
