- Pat sea bass fillets dry with paper towels. Season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Place fillets skin-side down and cook without moving for 3-4 minutes until skin is crispy.
- Flip and cook 2-3 minutes more until fish is opaque and flakes easily.
- Meanwhile, in a small saucepan, melt butter over medium-low heat.
- Add minced garlic and cook for 30 seconds until fragrant.
- Stir in lemon juice, chopped herbs, salt, and pepper. Keep warm but do not boil.
- Transfer fish to plates and drizzle with the warm herb-butter sauce.
- Serve immediately with lemon wedges.
